Como probablemente habrán notado ya a estas alturas, es que para esto se estudia, y mucho. Lo peor es que, al menos en Latinoamérica, no tenemos instancias como el Bootcamp que dicta el programa en sus dependencias en Chicago, por ejemplo. Entonces, cómo podemos afrontar el examen y la parte teórica de forma autodidacta?
Partamos por descargar el syllabus para Certified Cicerone®️ en español aquí . Verás un temario extenso sobre los contenidos que abarcará el examen en ambas certificaciones.
Hay muchísima bibliografía recomendada para guiar el estudio autodidacta para Cicerone. Para el nivel 2 de Certified Cicerone®️ recomiendo especialmente los siguientes:
(1) Tasting Beer 2da edición de R. Mosher (Cómo Catar Cerveza 2da edición en español):
Es importante que noten que hay dos versiones disponibles actualmente; recomiendo ampliamente que vayan por la Segunda edición, revisada y actualizada, especialmente en español. Si bien la traducción no es perfecta, es muchísimo mejor que la primera edición. Tasting Beer debe ser el libro de cabecera de cualquier biblioteca cervecera: es didáctico, muy bien ilustrado, y abarca casi todo lo que necesitas para comenzar el camino de conocimiento cervecero: historia, análisis sensorial, estilos, maridaje, cask ale, hasta coctelería cervecera. ¡Uno de mis libros favoritos de seguro!
(2) The Brewmaster’s Table de G. Olliver:
Este título en particular me gusta mucho; un libro atemporal, un viaje por distintas culturas, y que cualquier persona interesada en el mundo de la sommeliería y las armonizaciones debe atesorar en su colección. Garret Oliver sabe contar historias en este título dedicado especialmente al maridaje cervecero, ordenado por estilo y con un tono ameno, como si te lo estuviera contando en persona, directamente a ti. Lamentablemente, no conozco una versión en español de este libro, o un tomo que cubra los aspectos que exige el examen para Certified Cicerone®️ en español.
(3) Draught Quality Manual 4th Edition, de la Brewers Association:
Una de las áreas que debes manejar para el Certified Cicerone es el servicio de cerveza, no sólo en cuanto a temperaturas y cristalería, sino que los aspectos técnicos que implican sistemas draught de distintos tipos. Presiones, materiales, resistencias, grifos, acopladores, y las respectivas piezas de cada uno, son algunos ítems que necesitan especial atención. Este libro te ayudará en eso y más. La versión en español es algo floja (tiene apenas 30 páginas) pero cubrirá los aspectos básicos. Puedes descargarlo de forma gratuita en el portal de la Brewers Association .
(4) Guía de Estilos 2021 del Beer Judge Certification Program (BJCP):
Tanto el nivel 2 y 3 de la Certificación Cicerone comenzarán a evaluar el área de estilos cerveceros según los criterios de la Guía BJCP 2021 desde Agosto del 2022, por lo que es altamente recomendable familiarizarse lo más posible con este material desde ya: manejar rangos de IBUs y ABV por estilo, su historia, ingredientes clásicos, y perfiles de aroma, sabor, sensación en boca y apariencia. - (6) The Oxford Companion to Beer, de G. Oliver y cía: ¿Tienes alguna duda con un término, quieres profundizar en algunos conceptos o conocer otros nuevos? ¡Esta enciclopedia ordenada de la A a la Z es un excelente libro de consulta para esas situaciones! Disponible también como app.
- (7) Cicerone.org: no olviden chequear toda la info disponible y materiales de estudio que ofrece la página web del Cicerone Certification Program! Nunca he comprado los cursos pero apuesto que son muy útiles!
Essential Bibliography for the Certified Cicerone®️ Exam.
As you have probably already noticed by now, you study REALLY have to study for this, and a lot. The worst thing is that, at least in Latin America, we don’t have instances like the Bootcamp that dictates the program in its offices in Chicago, for example. So, how can we face the exam and the written portion in a self-taught way?
Let’s start by downloading the syllabus for Certified Cicerone®️ in Spanish here. You’ll see an extended syllabus detailing the subjects you need to cover in the CC exam. Then, you can check the recommended study resources out here.
There are plenty of books dedicated to prepare the Certified Cicerone®️ Exam, especially in English, and I want to recommend a few essentials:
(1) Tasting Beer, 2nd Edition, by R. Mosher:
It’s important for you to notice that there are two editions available on the market of this book; I recommend you to go after the second one, which has been updated more recently. Tasting Beer should be the star on any book shelf: it’s didactic, amazingly illustrated, and covers just about everything you need to start your path to beer knowledge: History, sensorial analysis, beer styles, beer pairing, cask ales, even beer cocktail recipes. One of my favorite books for sure!
(2) The Brewmaster’s Table, by G. Oliver:
I like this title in particular a lot; a timeless book, a journey through different cultures, and that anyone interested in the world of sommeliers and harmonization should treasure in their collection. Garret Oliver knows how to tell stories in this title dedicated especially to beer pairings, ordered by style and with a pleasant tone, as if he were telling it to you in person, directly to you. Unfortunately, I am not aware of a Spanish version of this book, or a volume that covers the aspects required by the Certified Cicerone®️ exam in Spanish.
(3) Draught Quality Manual 4th Edition, by the Brewers Association:
One of the areas that you must manage for the Certified Cicerone is the beer service, not only in terms of temperatures and glassware, but also the technical aspects that involve draft systems of different types. Pressures, materials, resistances, taps, couplers, and the respective pieces of each one, are some items that need special attention. This book will help you with that and more. The Spanish version is a bit weak (just 30 pages long) but it will cover the basics. You can download it for free at the Brewers Association website.
(4) 2021 Styles Guidelines by the Beer Judge Certification Program (BJCP):
Both levels 2 and 3 of the Cicerone Certification will begin to evaluate the area of brewing styles according to the criteria of the BJCP 2021 Guide from August 2022, so it is highly recommended to familiarize yourself as much as possible with this material from now: handle ranges of IBUs and ABV by style, its history, classic ingredients, and aroma, flavor, mouthfeel and appearance profiles.
